British Food has a bad reputation which probably hangs about from the Second World War when the UK had very little food and due to being an island in the Northern Hemisphere struggling to grow much exotic. However Britain due to its sailing traditions has traded over many years with other nations and the British Spice Trade was well underway in the 1600’s - long before the Spice Girls were formed. We will add recipes as and when we remember the following morning if we cooked anything and if it tasted great. It may not be our original recipe as we’re not Gordon Ramsey and we don’t know if the story about Fanny Craddock’s husband telling people to make their doughnut’s like Fanny’s is true or not but we often make some really scrumptious food so we might like to let you know about it so you can give it a go yourself. We won’t be posting it all over social media though as we don’t care about that sort of thing and we’re not here to try and impress you. The ingredients we specify are pretty much readily available (usually) and the quantities are what we think we added but we don’t usually measure out a knob of butter or a sprinkling of Paprika so you should use common sense which isn’t always possible when you’ve been to the pub but you can get even better results than last time you cooked the dish if you guestimate at the amount of any ingredient. Badgers aren’t really massive fans of pasta so we rarely cook it, in fact we mostly like meat so Chris Packham has never been invited to eat with us but then he’s never invited us to try his nut roast so it’s only fair. We tend to use fresh ingredients and freshly baked bread as the results with fresh herbs and freshly ground spices is way better than supermarket versions and we can’t resist a visit to a Farm Shop for the best of ingredients - it’s worth the extra little bit of time to prepare. We don’t buy ‘ready meals’ as they are full of preservatives and rarely taste very good anyway so if you need something quick bung some bits of chicken in an air fryer with some herbs and spices - takes minutes! We’ve added some Fat Badgers to each recipe. This isn’t to say how difficult they are to cook, it’s purely to give an indication of how much we really like each dish! One Fat Badger might mean we don’t make it so often which could just be because it’s so difficult for us to get the ingredients in - Five Fat Badgers means that we’d be prepared to batter your mother with a cricket bat if she tried to steal our food or at least stab her grubby fat fingers with our fork. There are many things you should have in your kitchen and many ingredients that we would recommend having in all the time - here’s a few things we would recommend you always have in.  We’re not Delia Smith so we won’t be telling you that you need a wooden spoon, a sharp knife and an oven - if you don’t know the basics then you should stick to the magical world of the chip shop and you shouldn’t be picking up sharp knives anyway.

Sometimes we cook when we get back from the pub because sometimes we like to go to the pub just for a drink. Sometimes the strange ideas when you’ve had a beer turn out to make very special dishes. We don’t always remember the ingredients and / or what order we added them. We also sometimes can’t remember how long we cooked them for but we’ve not killed anybody yet.
